    • Soak in the Mediterranean sights - and enjoy the classic regional recipes with Matteo and Daniele on Italy’s Amalfi Coast. Join us to learn how to make your very own Vin Brulé, the Italian take on the classically seasonal mulled wine. Learn how to make eggplant parmigiana, homemade ravioli with broccoli and scamorza cheese, housemade ricotta cavatelli with a puttanesca sauce.     • Before starting your day, join chefs Matteo and Daniele as they take you through the classic Roman brunch. Learn how to make your very own suppli alla romana - featuring homemade fettuccine with the ever-traditional “cacio e pepe” sauce, craft your very own ravioli filled with scamorza, a smoked mozzarella and broccoli rabe, and top it off with ricotta fritters delicately covered in your own homemade amaretto chocolate sauce. Learn to make your own pasta and cook authentic, family-style Italian food - like the Al Volo chefs! Quickly build your confidence, explore customizing a recipe to suite your own taste, and learn to express your creativity through cooking & pasta. In small, intimate classes of 16 or fewer, you will meet new friends, learn how to make your own pasta, prepare traditional Italian food, discuss wine pairing and more.

Once a year, Al Volo organizes a food & wine tour of italy. We rent a lovely villa and visit wine-makers during the day, with cooking classes at night back at the villa.
